Sushi, sushi, oh vegan sushi.  This is some of the best vegan sushi I have ever had, let alone made.Vegan Sushi with Sesame-Ginger Tofu

I love vegan sushi.  It definitely is one of my top 5 favorite foods, and that is saying a lot because I have A LOT of favorite foods.  Sometimes it can be frustrating.  It can be hard to find good vegan sushi.  #vegansushiprobs

I always thought sushi would be waaay too hard to make at home.  From all the different fillings you have to prepare to the rolling itself, it seemed like a daunting task.  And while this may not be the fastest meal ever, it is well worth the wait.  To speed things up, you can cook the rice ahead of time(I like to keep some in the fridge all the time for any sushi emergencies I may have) and pre-cut the carrots and cucumber.  If you are prepared, you can have sushi on the table within 10 minutes!

Rolling and cutting them takes some practice, but it’s really not as hard as it looks.  Basically, you lay rice out thinly and add vegetables on top.  Next, you take the bottom edge and roll it over as tightly as you can and continue rolling.  Add a drop or two of water or a few pieces of rice to make the seam stick and slice away!  Enjoy your vegan sushi. 🙂

Vegan Sushi with Sesame-Ginger Tofu

For the rice
  1. 2 cups short grain sushi rice
  2. 3 cups water
  3. 1/3 cup rice vineger
  4. 1 tsp salt
  5. 2 Tbsp sugar
For the Tofu
  1. 1 package firm tofu (the kind packed in water in the fridge)
  2. 1/4 cup soy sauce or tamari
  3. 1/4 cup rice vinager
  4. 2 Tbsp lime juice
  5. 1 Tbsp brown sugar
  6. 1 Tbsp minced fresh ginger
  7. 2 tsp toasted sesame oil
  8. 2 cloves crushed garlic
  9. 1 Tbsp olive oil
For the rolls
  1. 1 package toasted sushi nori
  2. 1/2 cucumber
  3. 1 medium carrot
  4. 1 avocado
  5. 1 jalapeno(optional)
  6. Toasted sesame seeds(optional)
For serving
  1. Wasabi
  2. Soy sauce
  3. Pickled ginger
Instructions
  1. Rinse the rice until the water runs clear. Combine with water in a pot and let sit for 15 minutes. While the rice is resting press the block of tofu for 10 minutes(place a heavy weight on top to expell liquid).
  2. Bring pot of rice to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Remove from heat and let cool.
  3. While that is cooking, combine soy sauce, rice vinegar, lime juice, brown sugar, ginger, sesame oil, and garlic in a large shallow dish. Cut tofu into strips no thicker than your finger and place in the marinade for 15 minutes.
  4. Combine rice vinager, salt, and sugar in a small saucepan and heat until sugar is dissolved. Pour over the rice and stir completely. Let cool, stirring occasionally.
  5. Heat olive oil over medium heat and cook the tofu until crispy.
For the rolls
  1. Cut up carrot, cucumber, avocado into matchsticks.
  2. Lay out a sheet of nori. Thinly spread rice about 1/3 to 1/2 of the way up the nori* and sprinkle with sesame seeds. Add carrot, cucumber, avocado, jalapeno if using and tofu on top of the rice and carefully roll up the bottom edge and wrap it up as tightly as possible.** Smear a few pieces of rice on the edge to help it stick and voila!
  3. Using a sharp knife, slice the sushi burrito into pieces, wiping the knife clean between each cut if necissary.
Notes
  1. I would reccomend making the rice ahead of time to speed up your sushi game!
  2. *It helps to have a bowl of water on the side to dip your fingers into to reduce stickiness.
  3. **A sushi mat really helps here, but its not necissary. If you're still confused, look at above photos or look it up on youtube.
